Holiday Leftover Recipies

 Try these Holiday Ham leftover recipes 

Monte Cristos- serves 4

Spread 8 slices of potato bread with dijon mustard.  Layer 4 bread slices with 2 pieces of swiss cheese and one good sized piece of cooked ham. Top with remaining slices of bread. In a small bowl whisk together 4 eggs, 1/2 cup milk, salt and pepper. Dip sandwiches in egg mixture. Melt 4 tbsp butter in skillet. Cook sandwiches on each side until golden brown. Dust lightly with confectioners sugar.

Greens, Eggs, and Ham – serves 4

Preheat oven to 350 degrees. On a baking sheet place 8 slices of rye bread. Layer 4 bread slices with 2 slices of swiss or provalone cheese. Layer with a few pieces of thinly sliced cooked ham. Heat for 10 to 15 minutes or until cheese is melted. Meanwhile in a skillet heat 2 tbsp butter and fry 4 eggs as desired. Top ham and cheese with fried egg and then with a pinch of baby spinach. Salt and pepper to taste.

Ham and Cheese Pasta Bake – serves 12

Preheat oven to 350 degrees. Boil 1 box of bow tie pasta until cooked and drain. In medium baking dish combine pasta, I onion coarsely chopped, 3 cups mushrooms, 2 cups cubed cooked ham, and 2 tomatoes diced. Once mixed together fold in 2 tbsp melted butter, 1/2 cup shredded swiss, 1/2 cup shredded chedder, and 1 cup parmesan. Top with bread crumbs and 2 more tbsp melted butter. Bake for 25 minutes.

 Also add leftover ham to:  Split Pea Soup, Mac n’ Cheese, Western Omelets, Cuban Sandwiches, Fried Rice, Navy Bean Soup, Pizza with Pineapples, Grilled Cheese, Baked Beans, & Casseroles.

Sometimes the best part of Thanksgiving is the side dishes.  Share your recipes right here on our blog.  Here are some unique and easy turkey day recipes from some of our holiday shoppers.

Glazed Squash - Preheat oven to 400 degrees.  Brush two baking sheets with olive oil, lay 3 halved, seeded, and sliced acorn squashes on baking sheets.  Seasonal with salt and pepper.  Sprinkle 1/2 cup brown sugar evenly over squash pieces. Roast for about 20 minuets or until tender.

Mashed Sweet Potatoes - Peel, cube, and boil eight large sweet potatoes until tender.  Drain and return to saucepan. Meanwhile in a small saucepan bring one cup of half and half, one stick of butter, and 1/2 cup of brown sugar to a simmer.  Stir to combine, remove from heat and add to potatoes. Mash until smooth and add salt and pepper to taste.

Pumpkin Pecorino Gratin - Preheat oven to 450 degrees. Combine 1/2 cup grated pecorino romano cheese and one cup of bread crumbs.  Season with salt and pepper. Spoon four cups pumpkin puree into a one quart baking dish.  Sprinkle with crumb mixture and top with three tablespoons of butter cut into small pieces.  Bake 15 to 20 minutes until crumbs are browned.
